      <image:title>About - It all started with a thought…</image:title>
      <image:caption>It is said that everything originates from a thought. What separated this thought from my normal (and never-ending) thoughts is that I took it step further and turned it into an idea. From that idea, I transformed it into a concept. That concept then manifested into what you see today, Plant-iT Vegan. I was one year into my Vegan journey when me and my then boyfriend came up with an idea for a Vegan restaurant. Since childhood, after discovering that I was a pretty good cook, I always wanted to own a restaurant. So this idea was a no brainer for me. But after becoming a Vegan and gaining so much knowledge, I wanted to provide more than just great tasting food. I wanted to create a holistic Vegan experience; an experience that’s outta this world. Plant-iT Vegan provides not only food services, but also a space that contains educational insight including sustainability, guided Vegan transition assistance, products, plus more. The story behind the logo… It was November 2019, I was at work, sitting at my desk, pondering per usual. With nothing but a pen and notepad, I started to sketch. Sunflower .  Earth .  Sunglasses .  My thoughts flowed from my brain, to my hand, and then to the pen onto paper. About fifteen minutes later, I marveled at the Picassoesque sketch that all started from a minuscule thought. The image that is displayed on this page is that sketch. In June 2020, I connected with a Graphic Designer from the Netherlands  who turned what once was a thought into the logo that you see today. The rest is history.</image:caption>

      <image:title>My Vegan Journey - “WTF are they putting in our food?!”</image:title>
      <image:caption>My Vegan journey began in June 2019. Before then, as an adult, I was always health conscious (growing up is a different story as I’m from SC - where everything is deep fried and white rice is served with almost every meal). I had stop eating beef and pork years earlier and switched from eating poultry to being a vegetarian to pescatarian. I did this over the course of ten plus years. In 2018, I did the majority of cooking at home, only eating out once per week. If I did eat anything fried, it was a treat and I only ate it outside of home. Even with all these restrictions in place and eating “clean,” I would still feel sick to my stomach when I ate certain foods. It was May 2019 when I had a conversation with my brother about how I was feeling; mentally, physically, and emotionally. He then proceeded to tell me about detoxing and eating an Alkaline Plant-Based diet. I was all for it. Up until then, I already had experience cutting everything out of my diet except for dairy and eggs. We both ordered all of our detox materials and went grocery shopping in preparation for the 28 days that we would spend detoxing. All I can say is that the detox was the hardest thing that I’ve ever done in my life. I always prided myself on being a great cook, but cooking Alkaline Plant-Based dishes proved to be a huge challenge, but I mastered it. My brother and I called each other every day, giving each other motivation and support, sharing knowledge, recipes and food pics, and checking on each other’s progress. During my first week, I was feeling good and I even went to the gym. My second week, I struggled so bad and talked about all the things that I was going to eat when those 28 days were up. It was during week three that I noticed something different. I felt like I’ve never felt before and said to myself, “WTF are they putting in our food?!” My thoughts were so clear, it reminded me of the movie Limitless. My body felt like I hit a reset button. I was happy, energized, and accomplishing things left and right. It was then that I decided to never go back to eating animal products or byproducts ever again. At the end of week four, I felt like a lightbulb - full of electricity, full of energy. Those around me saw the changes that took place both physically and within and as a result, I have helped others in their transition to being a Vegan. Today, I no longer eat 100% Alkaline, but my goal is to make a return to it and to never look back. When that happens, I’ll have another story to tell… [p.s.
